Individual, no-bake cheesecake cups featuring a graham cracker crust, creamy cream cheese filling, and fresh strawberry topping. Perfect for summer gatherings as they require no oven and stay set in the heat.

- 1 ½ cups (150g) graham cracker crumbs
- 6 tablespoons (85g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- ¼ teaspoon salt
- 16 ounces (450g) full-fat cream cheese, softened to room temperature
- 1 cup (240ml) heavy cream, cold
- ½ cup (60g) confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 pint (450g) fresh strawberries, hulled and diced
- 2 tablespoons strawberry jam or preserves (optional, for glaze)
- Mint leaves for garnish
Instructions
- Mix graham cracker crumbs, sugar, salt, and melted butter in a bowl until it resembles wet sand.
- Press about 2 tablespoons of the crust mixture into the bottom of each clear glass or mug, packing it down firmly. Set aside.
- In a large bowl, beat the softened cream cheese, confectioners’ sugar, vanilla, and lemon juice on medium-high speed for 3-4 minutes until completely smooth.
- In a separate cold bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until just combined, keeping the mixture light and airy.
- Spoon or pipe the filling over the crust in each glass, filling about ¾ of the way up.
- Refrigerate the cups for at least 2 hours, or ideally overnight, to set.
- If using jam, warm it slightly and brush a thin layer over the diced strawberries.
- Top the set filling with the diced strawberries and garnish with mint leaves.
- Serve immediately or keep refrigerated until serving.
Notes
Ensure cream cheese is at room temperature to avoid lumps. Use cold bowls for whipping heavy cream for better volume. Pack the crust firmly to prevent it from falling apart. Do not freeze the cups as the texture will become grainy. Add strawberries just before serving to prevent bleeding.
