Ingredients

  • ½ cup (100g) granulated sugar
  • 1 cup (200g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup Nutella (smooth consistency)
  • 1 ½ cups (250g) chocolate chips (semi-sweet and milk mix)
  • Flaky sea salt (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a stand mixer or bowl, cream softened butter, granulated sugar, and brown sugar on medium-high for 3-4 minutes until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture on low speed until just combined. Do not overmix.
  6. Fold in chocolate chips by hand.
  7. Portion dough into 1.5-2 tablespoon balls.
  8. Flatten each dough ball into a disc, place 1 teaspoon of Nutella in the center, and fold edges over to seal. Roll into a smooth ball.
  9. Place stuffed cookies on prepared baking sheets, spacing 2 inches apart.
  10. Chill dough in the refrigerator for at least 30 minutes (or freeze for up to 3 months).
  11. Bake for 10-12 minutes until edges are golden brown but centers look slightly soft.
  12. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  13. Sprinkle with flaky sea salt immediately after baking if desired.

Notes

Chilling the dough is crucial to prevent the Nutella from leaking out during baking. If in a rush, freeze the dough balls for 15 minutes. Rotate pans halfway through baking for even browning. Underbake slightly for a chewy texture. Cookies can be frozen raw for up to 3 months; bake straight from frozen adding 1-2 minutes to bake time.
