  • 3 cups (270g) old-fashioned rolled oats
  • 1 ½ cups (225g) raisins

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and white sugar together until light and fluffy (about 2-3 minutes with a mixer).
  3. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract until combined.
  4. In a separate medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring with a spoon until just combined. Do not overmix.
  6. Fold in the rolled oats and raisins gently with a spatula until evenly distributed.
  7. Cover the bowl and refrigerate the dough for at least 30 minutes (optional but recommended for better texture).
  8. Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
