Description
Juicy, deeply flavored bratwursts braised in beer with caramelized onions and spices, then seared for a crispy finish. A festive, crowd-pleasing German-style dish that is easier and tastier than restaurant takeout.

- 12 oz (355ml) lager, pilsner, or light amber ale (German-style Märzen or Helles preferred)
- 2 large yellow onions, thinly sliced (about 400g)
- 4 cloves garlic, minced
- 2 dried bay leaves
- 4–5 whole allspice berries
- 1 tablespoon Dijon mustard
- 8–10 high-quality pork bratwurst links
- 2 tablespoons butter (for searing)
- Salt (for sautéing onions)
- Mustard (yellow, spicy brown, or whole grain) for serving
- Soft rolls, pretzel buns, or brioche buns for serving
- Sauerkraut (optional, for serving)
Instructions
- Thinly slice the onions and mince the garlic. Have the beer, bay leaves, and allspice ready.
- Heat a large skillet or Dutch oven over medium heat. Add the onions and a pinch of salt. Cook for about 10 minutes, stirring occasionally, until soft and translucent.
- Add the minced garlic, bay leaves, allspice berries, and Dijon mustard. Stir constantly for 1 minute until fragrant. Pour in the beer, scraping up browned bits from the bottom. Simmer for 2 minutes to cook off raw alcohol.
- Nestle the bratwursts into the onion-beer mixture, ensuring they are mostly submerged. Cover the pot, reduce heat to medium-low, and braise gently for 15-20 minutes, turning once halfway through. Internal temperature should reach 160°F (71°C).
- Remove brats from the pot and set aside. Increase heat to medium-high. Add butter to the pan. Once foaming, return brats to the pan and sear for 1-2 minutes on each side until browned and crispy.
- Serve brats on warm rolls or plates, spooning the onion-beer sauce generously over the top. Add mustard and sauerkraut as desired.
Notes
Do not pierce the bratwurst casings with a fork; use tongs to keep juices inside. Keep the braising heat low to prevent tough casings. Use good quality beer you enjoy drinking. Toast buns lightly in butter for best texture. Leftovers can be stored in the fridge for 3 days or frozen for 2 months.
