Description

Ingredients

  • 1.5 to 2 pounds fresh raw bratwurst
  • 12 oz (1 bottle) German-style Lager or Helles
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 2 bay leaves
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 8 soft pretzel buns or potato rolls
  • Spicy brown mustard for serving
  • Grilled peppers and onions (optional)

Instructions

  1. Slice the onions thinly and set aside.
  2. Heat butter in a large cast-iron skillet or Dutch oven over medium heat. Add onions and cook undisturbed for 2-3 minutes to brown, then stir and cook for another 7-8 minutes until soft, golden, and jam-like. Add a splash of water if sticking occurs.
  3. Push onions to the side. Add minced garlic and caraway seeds to the empty space and cook for 30 seconds until fragrant.
  4. Pour in the beer, scraping up browned bits from the bottom. Stir in Dijon mustard and add bay leaves.
  5. Make wells in the onion mixture and place the raw bratwursts into the pan, ensuring they sit in the liquid.
  6. Cover the pan with a lid, reduce heat to medium-low, and simmer gently for 20 minutes. Do not boil violently.
  7. Remove the lid and flip each brat. Sear for 1-2 minutes per side until golden brown and crusty.
  8. Remove brats from the pan and let rest for 5 minutes.
  9. Serve brats on toasted pretzel buns with spicy brown mustard, topped with the caramelized onions and reduced beer sauce.
