Ingredients
- 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
- Water (enough to cover potatoes)
- 1 tablespoon salt (for boiling water)
- 6 slices thick-cut bacon, cooked and crumbled
- 3 tablespoons bacon grease
- 1 medium yellow onion, finely diced
- ½ cup apple cider vinegar
- 2 tablespoons whole grain mustard
- 1 tablespoon white sugar
- 1 teaspoon dried dill weed
- ½ teaspoon black pepper
- Optional: 2-3 green onions, sliced
- Optional: ½ teaspoon caraway seeds
- Optional: 1 teaspoon paprika for garnish
Instructions
- Peel potatoes and cut into 1-inch cubes. Bring a large pot of water with 1 tablespoon salt to a boil.
- Add potato cubes to boiling water, reduce heat to medium, and simmer for 15-20 minutes until fork-tender. Drain in a colander without rinsing.
- While potatoes boil, cook bacon in a large skillet over medium heat until crispy. Transfer bacon to a paper towel-lined plate, leaving the grease in the skillet.
- Add diced onion to the bacon grease in the skillet. Cook over medium heat for 3-4 minutes until soft and translucent.
- Add apple cider vinegar, mustard, sugar, dill, and pepper to the skillet. Whisk to combine and simmer for 2 minutes until sugar dissolves.
- Add the drained warm potatoes to the skillet. Gently toss to coat evenly in the dressing.
- Let the potatoes sit in the dressing for 5 minutes to absorb flavors.
- Stir in the crumbled bacon. Taste and adjust seasoning if needed. Serve warm.
Notes
Do not rinse the potatoes after boiling; the starch helps the dressing cling. Use warm potatoes to absorb the dressing better. If the salad is too watery, let it sit in the colander longer to steam off excess water. This recipe is naturally gluten-free and dairy-free. It does not freeze well; store leftovers in the refrigerator for up to 3 days.
