- 1 pound sirloin steak, cut into 1-inch cubes
- 1 pound baby potatoes, halved
- 2 tablespoons coconut oil or olive oil
- 6–8 cloves garlic, minced
- 4 tablespoons unsalted butter
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Prep ingredients: Cut steak into 1-inch cubes and pat dry. Halve potatoes if large. Mince garlic and chop parsley.
- Sear steak: Heat oil in a large skillet over medium-high heat. Sear steak bites in a single layer for 2-3 minutes per side until browned. Remove steak to a plate.
- Cook potatoes: In the same pan, cook potatoes with salt and pepper for 10-12 minutes until tender and crispy. Move to the side of the pan.
- Make sauce: Reduce heat to medium-low. Melt butter, then add garlic and Italian seasoning. Stir for 30 seconds until fragrant. Stir in Parmesan cheese until melted and glossy.
- Combine: Return steak to the pan with potatoes. Toss to coat in sauce and warm through for 1 minute. Adjust seasoning and sprinkle with parsley.
- Serve immediately.
Notes
Pat steak dry before searing for a better crust. Do not crowd the pan; cook in batches if necessary. Keep heat low when adding butter and garlic to prevent burning. This recipe is naturally gluten-free.
