  • 1 cup (150g) frozen raspberries, thawed
  • 23 tablespoons powdered sugar
  • 1 teaspoon lemon juice
  • 12 tablespoons water
  • Butter and cocoa powder for greasing ramekins

Instructions

  1. Preheat oven to 425°F (220°C). Grease 4-6 (6-ounce) ramekins with butter and dust with cocoa powder, tapping out excess.
  2. Melt chocolate and butter together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Set aside to cool slightly.
  3. In a medium bowl, whisk eggs, egg yolks, sugar, and vanilla extract vigorously until pale, thick, and fluffy (about 2-3 minutes).
  4. Pour melted chocolate mixture into egg mixture and whisk gently to combine. Sift in flour and salt, then fold in gently until just combined.
  5. Divide batter evenly among prepared ramekins, filling them about three-quarters full.
  6. Bake for 12-14 minutes until edges are set but centers are still soft and jiggly.
  7. While cakes bake, blend raspberries, powdered sugar, lemon juice, and water until smooth. Strain if desired.
  8. Remove cakes from oven and let sit for 1 minute. Run a knife around edges, invert onto plates, and serve immediately with raspberry coulis.

Notes

Timing is critical; the difference between a lava cake and a baked cake is just two minutes. The cakes continue to cook from residual heat after removal from the oven. For best results, use high-quality baking chocolate rather than chips. The batter can be prepared and refrigerated for up to 24 hours before baking.
