  • 3 medium firm, tart apples (e.g., Honeycrisp, Granny Smith, or Braeburn), peeled and diced
  • ½ cup (120g) full-fat plain yogurt
  • 1 cup (120g) confectioners’ sugar, sifted
  • 2 tablespoons honey
  • 23 tablespoons warm water
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan and line the bottom with parchment paper if desired.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a separate bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes with a mixer).
  4. Add the egg and vanilla extract to the butter mixture and beat until combined. Stir in the honey and yogurt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
  6. Gently fold in the diced apples using a spatula until evenly distributed.
  7. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
