- 1.5 pounds smoked sausage (Andouille or kielbasa), sliced into half-moons
- 1 large red onion, chopped
- 2 large bell peppers (mixed colors), chopped
- 1.5 pounds potatoes (Yukon Gold), diced into 1-inch cubes
- 2 cups broccoli florets
- 1 large red bell pepper, chopped
- 1 teaspoon red pepper flakes
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 3 tablespoons vegetable oil
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper and lightly grease it.
- Wash and dry vegetables. Dice potatoes into 1-inch cubes. Chop onions and bell peppers into similar-sized chunks. Slice smoked sausage into ¼-inch thick half-moons. Cut broccoli florets into bite-sized pieces.
- Place all chopped ingredients into a large mixing bowl.
- Drizzle with vegetable oil. Sprinkle with smoked paprika, garlic powder, onion powder, dried thyme, and red pepper flakes. Add black pepper.
- Toss everything together until evenly coated. Taste sausage first to determine if additional salt is needed.
- Spread the mixture onto the prepared sheet pan in a single layer. Ensure there is space between items to prevent steaming.
- Roast for 25-30 minutes. Halfway through (around 15 minutes), remove pan and stir to ensure even browning.
- Serve hot, optionally with a squeeze of fresh lemon juice.
Notes
Do not overcrowd the pan; veggies need space to roast rather than steam. Use smoked paprika for enhanced flavor. Fresh garlic burns at high heat, so garlic powder is preferred. If using a smaller pan, cook in two batches. This recipe is naturally gluten-free if the sausage is certified GF.
