  • 1.5 pounds smoked sausage (Andouille or kielbasa), sliced into half-moons
  • 1 large red onion, chopped
  • 2 large bell peppers (mixed colors), chopped
  • 1.5 pounds potatoes (Yukon Gold), diced into 1-inch cubes
  • 2 cups broccoli florets
  • 1 large red bell pepper, chopped
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 3 tablespoons vegetable oil
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper and lightly grease it.
  2. Wash and dry vegetables. Dice potatoes into 1-inch cubes. Chop onions and bell peppers into similar-sized chunks. Slice smoked sausage into ¼-inch thick half-moons. Cut broccoli florets into bite-sized pieces.
  3. Place all chopped ingredients into a large mixing bowl.
  4. Drizzle with vegetable oil. Sprinkle with smoked paprika, garlic powder, onion powder, dried thyme, and red pepper flakes. Add black pepper.
  5. Toss everything together until evenly coated. Taste sausage first to determine if additional salt is needed.
  6. Spread the mixture onto the prepared sheet pan in a single layer. Ensure there is space between items to prevent steaming.
  7. Roast for 25-30 minutes. Halfway through (around 15 minutes), remove pan and stir to ensure even browning.
  8. Serve hot, optionally with a squeeze of fresh lemon juice.

Notes

Do not overcrowd the pan; veggies need space to roast rather than steam. Use smoked paprika for enhanced flavor. Fresh garlic burns at high heat, so garlic powder is preferred. If using a smaller pan, cook in two batches. This recipe is naturally gluten-free if the sausage is certified GF.
