Description
A forgiving, flavorful, and easy slow cooker chicken tortilla soup that requires zero active cooking. Perfect for busy weeknights, this recipe melds spices and ingredients into a rich broth that tastes like it simmered for days.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 medium yellow or white onion, diced
- 1 can (14.5 oz) diced tomatoes, un-drained
- 2 cups low-sodium chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (4 oz) green chiles, mild or hot
- 1 tbsp chili powder
- 1 tbsp ground cumin
- Salt and pepper to taste
- Toppings: Shredded cheese (Cheddar, Monterey Jack, or Mexican blend), Sour cream or Greek yogurt, Fresh cilantro, Lime wedges, Crushed tortilla chips, Avocado
Instructions
- Place chicken breasts at the bottom of a 4-6 quart slow cooker.
- Add diced onion, canned tomatoes (with juice), chicken broth, rinsed black beans, drained corn, and green chiles.
- Sprinkle chili powder and cumin over the ingredients. Do not stir yet.
- Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours until chicken is tender.
- Remove chicken to a cutting board and shred using two forks. Discard any skin or cartilage.
- Return shredded chicken to the pot.
- Taste the broth and add salt and pepper as needed. If soup is too thin, simmer uncovered for 30 minutes or blend a cup and stir back in.
- Ladle into bowls and serve with desired toppings.
Notes
For a thicker soup, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir in during the last 30 minutes. You can also use rotisserie chicken by adding it during the last hour of cooking. The soup freezes well for up to 3 months. Always add a squeeze of lime juice before eating to brighten the flavors.
