- 2 pounds boneless, skinless chicken breasts or thighs
- 6–8 cloves garlic, minced (about 3 tablespoons)
- 1 tablespoon fresh grated ginger (or 1 teaspoon ground ginger)
- ½ cup honey
- ½ cup low-sodium soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water (for cornstarch slurry)
- Optional: 1 teaspoon sesame seeds, 2 green onions sliced, ½ teaspoon red pepper flakes
Instructions
- Rinse and pat dry the chicken, then cut into even 1.5-inch chunks.
- In a mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and grated ginger until well combined.
- Place chicken pieces in the bottom of a 4-6 quart slow cooker and pour the sauce over them, stirring to coat.
- Cook on LOW for 4-6 hours (or HIGH for 2-3 hours) until chicken is fork-tender.
- In a small bowl, mix cornstarch and water to create a smooth slurry.
- Stir the slurry into the slow cooker, replace the lid, and cook on HIGH for 20-30 minutes until the sauce thickens.
- Serve hot over rice or noodles, garnished with green onions and sesame seeds if desired.
Notes
For best results, use fresh garlic and ginger. If using chicken thighs, trim excess fat. To make gluten-free, substitute soy sauce with tamari or coconut aminos. The sauce will thicken further upon cooling; add a splash of water or broth when reheating.
