- Melt the butter in a microwave-safe bowl in 30-second intervals, stirring until liquid. Let it cool for a minute so it is warm but not hot.
- Add the granulated sugar and eggs to the melted butter. Whisk vigorously for 3-4 minutes until the mixture is pale, thick, and slightly fluffy. This step is crucial for the crackly top.
- Stir in the vanilla extract. Add the flour, cocoa powder, and fine sea salt. Fold gently with a spatula just until the flour disappears. Do not overmix. Fold in optional add-ins like chocolate chips or nuts if using.
- Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until the top looks set and crackly. A toothpick inserted into the center should come out with moist crumbs attached, not wet batter.
