Small-Batch Snickerdoodle Cookies: Best Easy Homemade Recipe

  • Author: Eden
  • Total Time: 20 minutes
  • Yield: 4-6 servings 1x

Description

A quick and easy small-batch snickerdoodle cookie recipe that yields 4-6 soft, chewy cookies with crispy edges and a cinnamon-sugar coating in under 20 minutes.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • Pinch of salt (for coating)

Instructions

  1. In a medium bowl, cream the softened butter, granulated sugar, and brown sugar on medium speed until light, fluffy, and pale (about 2 minutes).
  2. Beat in the egg and vanilla extract until fully combined and smooth.
  3. In a separate small bowl, whisk together the flour, baking powder, cream of tartar, and salt.
  4. Add the dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
  5. In a small bowl, mix the 2 tablespoons of sugar, 1 teaspoon of cinnamon, and a pinch of salt for the coating.
  6. Portion the dough into 4-6 balls (about 1.5 tablespoons each). Roll each ball in your hands to smooth, then roll in the cinnamon sugar mixture until fully coated.
  7. Place coated dough balls on a parchment-lined baking sheet, spacing them 2 inches apart.
  8. Bake in a preheated 350°F (175°C) oven for 8-10 minutes, until edges are set and slightly golden but centers look soft.
  9. Let cookies cool on the baking sheet for 5 minutes to set before transferring to a cooling rack or serving.

Notes

Ensure butter is softened but not melted. Do not overmix the dough to avoid tough cookies. For thicker cookies, chill dough balls for 15-30 minutes before baking. Store leftovers in an airtight container with a slice of bread to maintain softness.
