  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 ½ cups all-purpose flour

  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your smoker or grill to 275°F. Add wood pellets or soaked wood chips to generate steady, thin blue smoke.
  2. In a large mixing bowl, peel and mash the ripe bananas until mostly smooth but with some texture.
  3. Add the sugar and vegetable oil to the mashed bananas. Stir well until the sugar is mostly dissolved and the mixture is glossy.
  4. Add the flour, baking soda, and salt to the wet mixture. Stir gently until just combined; do not overmix. The batter should remain slightly lumpy.
  5. Fold in ¾ cup of the chocolate chips, reserving the remaining ¼ cup for the top.
  6. Grease a 9×5 inch metal loaf pan. Pour the batter into the pan and smooth the top with a spatula.
  7. Sprinkle the reserved chocolate chips over the top of the batter.
  8. Place the loaf pan directly on the grill grates. Close the lid and smoke for 45 minutes.
  9. Check the internal temperature with an instant-read thermometer. If it is below 200°F, continue smoking. If the top is getting too dark, loosely tent with aluminum foil.
  10. Once the internal temperature reaches 200°F-205°F, remove from the smoker. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use bananas that are blackened on the outside for maximum sweetness and flavor. Do not overmix the batter to ensure a tender crumb. The bread is done when the internal temperature reaches 200°F. Let it cool completely to prevent a gummy texture. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free blend.
