Description
An elegant, high-protein breakfast-for-dinner casserole that is perfect for breaking a fast or a quick weeknight meal. It requires zero active cooking time and bakes hands-off for a stress-free, creamy result.
Ingredients
- 8 large eggs
- 1 cup heavy cream or whole milk
- 8 oz smoked salmon (lox-style, torn into chunks)
- 1 cup sharp cheddar cheese (shredded)
- 3 tablespoons fresh dill (chopped)
- 2 stalks green onions (sliced)
- 4 oz cream cheese (softened)
- Salt and black pepper (to taste)
- Everything bagel seasoning (optional, for topping)
- Butter or cooking spray (for greasing dish)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or cooking spray.
- In a large bowl, whisk the eggs, heavy cream, salt, and pepper vigorously until uniform and slightly frothy.
- Arrange torn chunks of smoked salmon in a single layer across the bottom of the prepared baking dish.
- Drop softened cream cheese in small dollops over the salmon, then sprinkle shredded cheddar cheese evenly on top.
- Pour the egg mixture over the salmon and cheese. Sprinkle with chopped dill, green onions, and optional everything bagel seasoning.
- Bake for 30-35 minutes until edges are set and the center has a slight jiggle. Cover loosely with foil if the top browns too quickly.
- Let the casserole rest for 10 minutes before cutting and serving warm.
Notes
Do not overmix the eggs to avoid incorporating too much air. Ensure cream cheese is softened before adding. Resting the casserole for 10 minutes is crucial for proper setting. This recipe is naturally gluten-free but check labels on processed ingredients. It does not freeze well due to texture changes in eggs and dairy.
