  • ½ cup all-purpose flour (for dredging)
  • 1 teaspoon kosher salt (plus more to taste)
  • ½ teaspoon black pepper (plus more to taste)
  • 1 teaspoon garlic powder
  • 3 tablespoons unsalted butter
  • 3 large yellow onions, thinly sliced
  • 2 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 1 teaspoon dry mustard
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Pat pork chops dry with paper towels. In a shallow bowl, mix flour, salt, pepper, and garlic powder. Dredge each chop in the mixture, shaking off excess.
  2. Heat butter in a large cast-iron skillet or Dutch oven over medium-high heat. Sear chops in batches for 3-4 minutes per side until golden brown. Remove to a plate; do not wipe the pan.
  3. Reduce heat to medium. Add sliced onions to the skillet with the pork drippings. Cook slowly for 15-20 minutes, stirring occasionally, until soft, golden, and jammy.
  4. Sprinkle 2 tablespoons of flour over the onions and stir for 1 minute to create a roux. Slowly whisk in chicken broth, scraping the bottom of the pan to release fond. Simmer for 2-3 minutes until thickened.
  5. Stir in heavy cream, dry mustard, and Worcestershire sauce. Simmer for 2 minutes until glossy. Taste and adjust seasoning.
  6. Return pork chops to the skillet, nestling them into the gravy. The gravy should come halfway up the chops. Cover and simmer on low for 15-20 minutes until pork reaches 145°F, flipping halfway through.
  7. Remove lid for the last 5 minutes to allow chops to brown slightly. Serve immediately with extra gravy and onions.

Notes

Do not rush the sear; medium-high heat is best. Ensure onions are fully caramelized for sweetness. Never wash the pan between searing and making gravy to preserve the fond. Keep heat low when adding cream to prevent curdling. Let the dish rest for 10 minutes before serving to allow flavors to meld.
