  • Extra virgin olive oil (for drizzling)
  • Butter or olive oil (for toasting bread)
  • White vinegar (for poaching water)
  • Microgreens or chives (optional garnish)

Instructions

  1. Cut the avocado in half, scoop out the flesh, and mash it in a small bowl with a fork.
  2. Squeeze lemon juice over the avocado and add a pinch of salt; mix well and set aside.
  3. Heat a skillet over medium heat and add a small pat of butter or drizzle of olive oil.
  4. Toast the sourdough slices for 2-3 minutes per side until golden brown and crispy; remove to a plate.
  5. Fill a saucepan with about 2 inches of water and bring to a gentle simmer (not a rolling boil).
  6. Add a splash of white vinegar to the water to help the egg whites coagulate.
  7. Crack each egg into a small ramekin or measuring cup.
  8. Gently slide the eggs into the simmering water one at a time.
  9. Swirl the water gently around the eggs to help the whites wrap around the yolks.
  10. Poach the eggs for 3-4 minutes until the whites are set but the yolks are still soft.
  11. Remove the eggs with a slotted spoon and let excess water drip off.
  12. Spread the mashed avocado generously over the toasted sourdough.
  13. Top with the poached egg.
  14. Sprinkle with flaky sea salt, black pepper, and red pepper flakes.
  15. Drizzle with extra virgin olive oil and garnish with microgreens or chives if desired.
  16. Serve immediately.
