Description
A rustic, no-roll Southern peach cobbler featuring a buttery drop biscuit topping. This easy dessert comes together in about 15 minutes of prep and is perfect for summer entertaining or quick weeknight treats.

- 6 cups sliced fresh or frozen peaches
- 1/2 cup granulated sugar (for filling)
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar (for topping)
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup heavy cream
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish with butter or non-stick spray.
- In a large bowl, combine peaches, 1/2 cup granulated sugar, brown sugar, lemon juice, cinnamon, cornstarch, and vanilla. Toss to coat and pour into the prepared baking dish.
- In a medium bowl, whisk together flour, baking powder, salt, and 2 tablespoons of sugar.
- Cut the cold cubed butter into the flour mixture using a fork or pastry cutter until it resembles coarse crumbs with pea-sized butter pieces.
- Slowly pour in heavy cream and stir gently with a wooden spoon until the dough just comes together. Do not overmix.
- Drop mounds of biscuit dough directly on top of the peach mixture in a single layer, leaving space between them.
- Bake for 45-50 minutes until the biscuit tops are golden brown and peach juices are bubbling vigorously. Cover with foil if browning too quickly.
- Let cool for at least 10 minutes before serving to allow juices to thicken. Serve warm with vanilla ice cream or whipped cream.
Notes
Keep butter cold for flaky biscuits. Do not overmix the dough. Cornstarch is essential to thicken the juices. Can be made with frozen peaches without thawing. Reheats best in the oven at 350°F.
