- 4 ounces (115g) soft fresh goat cheese log
- ½ cup (60g) walnuts
- 2 tablespoons (30ml) honey
- 2 tablespoons (30ml) extra virgin olive oil
- Salt and freshly cracked black pepper to taste
Instructions
- Heat a small skillet over medium heat. Add walnuts in a single layer and toast for 3-5 minutes, shaking occasionally, until fragrant. Pour onto a plate to cool.
- Warm the honey in a microwave-safe bowl for 10-15 seconds or in a small saucepan over low heat until runny.
- Place cooled walnuts in a small bowl, pour warm honey over them, and toss to coat evenly. Let sit for a minute to set.
- Place spring mix in a large mixing bowl. Drizzle with olive oil and season with salt and pepper. Toss gently with tongs until lightly coated.
- Crumble goat cheese over the dressed greens using your hands or a grater.
- Scatter candied walnuts over the top and give one final gentle toss to distribute evenly.
- Serve immediately while walnuts are crunchy and greens are fresh.
