Ultra-Fudgy One-Bowl Brownies: Best Easy Dessert

  • Author: Eden
  • Total Time: 45 minutes
  • Yield: 16 servings 1x

Description

These ultra-fudgy one-bowl brownies are dense, glossy, and rich, requiring only pantry staples and a single bowl for mixing. They feature a signature crackly top and a gooey center, ready in under 45 minutes.

Ingredients

Scale
  • 1 cup (226g) unsalted butter
  • 8 ounces (225g) semi-sweet chocolate bars, chopped
  • 1 ½ cups (300g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ½ cup (45g) unsweetened cocoa powder (Dutch-processed preferred)
  • ½ cup (65g) all-purpose flour
  • ½ teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips (optional)
  • Flaky sea salt (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
  2. In a medium saucepan over low heat, melt the chopped chocolate and butter together, stirring frequently until smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, vigorously whisk the granulated sugar and eggs for 1-2 minutes until pale and slightly thickened.
  4. Pour the melted chocolate and butter mixture into the egg mixture and whisk until well combined. Add vanilla extract and whisk again.
  5. Add the flour, cocoa powder, and salt to the bowl. Stir gently with a spatula until just combined; do not overmix.
  6. If using, fold in the chocolate chips gently.
  7. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes, until the top is set and crackly but the center still jiggles slightly.
  8. Cool in the pan on a wire rack for at least 30 minutes before lifting out and cutting into squares. Sprinkle with flaky sea salt if desired.

Notes

Do not use chocolate chips for the base as they contain stabilizers that prevent a fudgy texture. Whisking the eggs and sugar vigorously is crucial for the crackly top. Do not overbake, as brownies continue to cook in the hot pan. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, substitute butter with coconut oil.
