  • Author: Eden
  • Total Time: 1 hour 15 minutes
  • Yield: 10 servings 1x

Description

An easy, one-bowl pumpkin spice bread that stays incredibly moist for days, featuring a tangy cream cheese swirl. Perfect for busy weeknights or cozy fall mornings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup 100% pure pumpkin puree
  • 1/2 cup buttermilk
  • 4 oz block cream cheese (full-fat, softened)
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In a separate bowl, whisk together the sugar, vegetable oil, eggs, pumpkin puree, and buttermilk until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix.
  5. In a small bowl, mix the softened cream cheese, 2 tablespoons sugar, vanilla extract, and 1 teaspoon flour until smooth.
  6. Pour half of the pumpkin batter into the prepared loaf pan. Dollop spoonfuls of the cream cheese mixture over the batter. Pour the remaining batter on top.
  7. Use a paring knife to swirl the cream cheese into the batter in a figure-eight pattern.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. For best results, use room temperature cream cheese for the swirl. The bread stays moist for up to 3 days at room temperature or can be frozen for up to 3 months.
