- 4 oz block cream cheese (full-fat, softened)
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon flour
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
- In a separate bowl, whisk together the sugar, vegetable oil, eggs, pumpkin puree, and buttermilk until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix.
- In a small bowl, mix the softened cream cheese, 2 tablespoons sugar, vanilla extract, and 1 teaspoon flour until smooth.
- Pour half of the pumpkin batter into the prepared loaf pan. Dollop spoonfuls of the cream cheese mixture over the batter. Pour the remaining batter on top.
- Use a paring knife to swirl the cream cheese into the batter in a figure-eight pattern.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. For best results, use room temperature cream cheese for the swirl. The bread stays moist for up to 3 days at room temperature or can be frozen for up to 3 months.
