  • 3 tablespoons (45g) cold vegan butter, cubed
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together 2 cups flour, granulated sugar, baking powder, baking soda, salt, and 2 teaspoons cinnamon until uniform.
  3. In a large bowl, whisk plant milk, oil, apple cider vinegar, and vanilla extract. Let sit for 5 minutes to curdle slightly.
  4. Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined; do not overmix. The batter should be lumpy.
  5. Fold in diced apples, reserving a few small chunks for topping.
  6. In a small bowl, combine oats, 1/4 cup flour, brown sugar, and 1/4 teaspoon cinnamon. Cut in cold cubed vegan butter and maple syrup until mixture resembles coarse crumbs.
  7. Divide batter evenly among muffin cups, filling about 3/4 full.
  8. Sprinkle streusel generously over each muffin and place reserved apple pieces on top.
  9. Bake for 18-20 minutes until tops are golden brown and a toothpick inserted comes out clean.
