- 1 tablespoon pure maple syrup
- 1/4 teaspoon cinnamon
Instructions
- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together 2 cups flour, granulated sugar, baking powder, baking soda, salt, and 2 teaspoons cinnamon until uniform.
- In a large bowl, whisk plant milk, oil, apple cider vinegar, and vanilla extract. Let sit for 5 minutes to curdle slightly.
- Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined; do not overmix. The batter should be lumpy.
- Fold in diced apples, reserving a few small chunks for topping.
- In a small bowl, combine oats, 1/4 cup flour, brown sugar, and 1/4 teaspoon cinnamon. Cut in cold cubed vegan butter and maple syrup until mixture resembles coarse crumbs.
- Divide batter evenly among muffin cups, filling about 3/4 full.
- Sprinkle streusel generously over each muffin and place reserved apple pieces on top.
- Bake for 18-20 minutes until tops are golden brown and a toothpick inserted comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the batter to avoid tough muffins. Use crisp, tart apples like Honeycrisp or Granny Smith; avoid Red Delicious. Ensure vegan butter is cold for the streusel to create flaky layers. Muffins can be stored at room temperature for 3 days or frozen for 3 months.
