Description
A rich, silky, and decadent vegan chocolate mousse made with just three main ingredients: ripe avocados, cocoa powder, and sweetener. It requires no cooking and is ready in minutes.
Ingredients
Scale
- 2 medium ripe avocados (about 1 cup flesh / 200g)
- ½ cup unsweetened cocoa powder (50g)
- ¼ to ½ cup sweetener (60-120g), such as maple syrup, agave nectar, or brown rice syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- Optional: 1 teaspoon coffee or espresso powder, 2 tablespoons peanut butter, or fresh berries for topping
Instructions
- Cut avocados in half, remove pits, and scoop flesh into a bowl. Remove any brown spots and mash with a fork until mostly smooth.
- Add mashed avocado, cocoa powder, sweetener, vanilla extract, and salt to a high-speed blender.
- Blend on high speed for 2-3 minutes, stopping to scrape down the sides, until the mixture is completely smooth and glossy with no green streaks.
- Taste and adjust sweetness, salt, or vanilla as needed. If too thick, add a splash of plant-based milk one tablespoon at a time.
- Chill in the refrigerator for at least 30 minutes to firm up (optional but recommended).
- Spoon into serving bowls and top with whipped coconut cream, fresh berries, or sea salt if desired.
Notes
Ensure avocados are very ripe (dark skin, soft to touch) for the smoothest texture. Do not skip the salt and vanilla as they enhance the chocolate flavor and mask any avocado taste. The mousse can be stored in the fridge for up to 3 days or frozen for up to 1 month.
