  • ¼ cup Dutch-processed cocoa powder (25g)
  • 34 tablespoons maple syrup (45-60ml)
  • 1 teaspoon vanilla extract
  • 23 tablespoons plant-based milk (e.g., oat or almond milk)
  • 1 pinch salt
  • Optional: ½ teaspoon coffee or espresso powder
  • Optional: Chopped nuts for topping
  • Optional: Coconut whipped cream for topping

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Scrape off any brown spots or stringy bits to ensure only green flesh is used.
  2. Add the avocado flesh, cocoa powder, maple syrup, vanilla extract, salt, and 2 tablespoons of plant milk to a high-speed blender.
  3. Blend on low, then increase to high, blending for 1-2 minutes until the mixture is completely smooth and glossy with no green streaks. Stop to scrape down the sides if needed.
  4. Taste the mousse and adjust sweetness or flavor by adding more maple syrup, cocoa powder, or salt as desired.
  5. Transfer the mousse into serving bowls or a large container. Cover and refrigerate for at least 30 minutes to chill and firm up.
  6. Serve chilled, optionally topped with whipped cream, nuts, or fresh berries.

Notes

Ensure avocados are very ripe and soft to the touch for a smooth texture. Dutch-processed cocoa powder provides a darker, less acidic chocolate flavor. The mousse thickens as it chills; if it becomes too thick, stir in a splash of plant milk. It keeps in the fridge for up to 5 days.
