These simple, 5-ingredient vegan cookies are crispy on the edges, chewy in the middle, and require no eggs or dairy. Made with pantry staples like peanut butter, oats, and maple syrup, they are gluten-free friendly and ready in under 20 minutes.
Ingredients
- 1 cup (250g) creamy natural peanut butter
- 1/2 cup (120ml) pure maple syrup
- 1 cup (100g) oat flour (made from 1 cup rolled oats)
- 1 teaspoon pure vanilla extract
- 3/4 cup (130g) semi-sweet or dark chocolate chips
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup rolled oats (optional, for texture)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- If making oat flour, pulse 1 cup of rolled oats in a blender until fine. Set aside.
- In a large bowl, vigorously stir together the peanut butter and maple syrup until smooth.
- Add vanilla extract and mix to combine.
- Add oat flour, baking soda, and salt to the wet ingredients. Stir until a thick, sticky dough forms.
- If using, fold in the optional extra rolled oats.
- Gently fold in the chocolate chips.
- Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing them 2 inches apart.
- Flatten cookies slightly with the back of a spoon or hand.
- Bake for 12-14 minutes until edges are golden brown but centers look slightly soft.
- Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
Use room temperature peanut butter for easier mixing. Do not overbake as cookies continue to cook on the hot pan. For thicker cookies, chill the dough for 30 minutes before baking. Sprinkle with flaky sea salt after baking for enhanced flavor. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
