Description

Soft, chewy, and rich homemade pralines made with brown sugar, butter, heavy cream, and vanilla bean. These candies are easier to make than you think and taste better than store-bought versions.


Ingredients

  • 1/2 cup (113g) unsalted butter
  • 2 cups (400g) dark brown sugar, packed
  • 1/2 cup (120ml) heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 2 cups (200g) pecan halves, toasted
  • 1/4 teaspoon salt
  • Flaky sea salt for garnish (optional)

Instructions

  1. Prep your station by lining two baking sheets with parchment paper. Measure out ingredients and scrape the vanilla bean. Toast pecans if desired and let cool.
  2. In a heavy-bottomed saucepan, combine butter, brown sugar, and heavy cream. Place over medium heat and stir constantly until butter melts and sugar dissolves completely (5-7 minutes).
  3. Clip on a candy thermometer. Increase heat to medium-high and bring mixture to a boil. Do not stir once boiling; swirl pan gently to prevent sticking. Boil until temperature reaches 234°F to 240°F (soft-ball stage), approximately 10-15 minutes.
  4. Remove pot from heat when temperature reaches 238°F. Let cool for 5 minutes.
  5. Stir in vanilla bean seeds. Vigorously beat the mixture with a wooden spoon until it thickens, loses its gloss, and becomes matte (3-5 minutes).
  6. Fold in toasted pecans until evenly distributed.
  7. Drop dollops of mixture onto prepared baking sheets using two spoons. Sprinkle with flaky sea salt if using.
  8. Let cool at room temperature for 30 minutes until firm. Do not refrigerate.

Notes

Ensure your candy thermometer is accurate by testing it in boiling water. Do not stir the mixture once it begins boiling to prevent crystallization. If the mixture sets too quickly before beating, gently reheat on low for 30 seconds. Store in an airtight container at room temperature for up to 2 weeks.
