Description

A silky, rich, and creamy no-churn vanilla bean ice cream made with just three simple ingredients: heavy cream, sweetened condensed milk, and a real vanilla bean. This foolproof recipe requires no churning machine or custard base.

  • 2 cups (480ml) heavy cream, very cold
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 1 whole vanilla bean
  • Pinch of salt

Instructions

  1. Pour the cold heavy cream into a large mixing bowl. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the cream. Let it infuse for a few minutes.
  2. Using a stand mixer or hand mixer on medium-high speed, whip the cream until stiff peaks form. Be careful not to over-whip. Remove about half of the whipped cream and set it aside in a separate bowl.
  3. Add the sweetened condensed milk to the reserved half of the whipped cream and stir gently until completely combined to lighten the mixture.
  4. Pour the condensed milk mixture into the large bowl with the remaining whipped cream. Using a rubber spatula, gently fold the ingredients together until no white streaks remain, being careful not to deflate the air.
  5. Remove and discard the vanilla pod. Pour the mixture into an airtight container.
  6. Smooth the top, press plastic wrap directly onto the surface to prevent ice crystals, and freeze for at least 6 hours or overnight.
  7. Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften slightly for easy scooping.

Notes

Ensure all equipment (bowl, whisk) is cold for best whipping results. Do not over-whip the cream or it will turn to butter. Use high-quality heavy cream with at least 35% fat. The vanilla pod can be dried and used to infuse sugar for future recipes. This recipe is naturally gluten-free.
