Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes with a mixer).
- Add the creamy peanut butter, egg, and vanilla extract. Mix until fully combined and smooth.
- Add the flour, baking soda, and salt. Mix on low speed or stir by hand just until the flour disappears. Do not overmix.
- Scoop dough onto prepared baking sheets, leaving 2 inches between cookies. Press down slightly with your palm.
- Bake for 10-12 minutes until edges are set but centers still look soft.
- Immediately sprinkle with flaky sea salt while cookies are hot.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
