Crispy Garlic Parmesan Chicken Wings: 1 Trick for Game Day

  • Author: Eden
  • Total Time: 55 minutes
  • Yield: 6 servings 1x

Description

These crispy garlic parmesan chicken wings are the ultimate game day appetizer. Using a baking powder trick and a butter-garlic-Parmesan toss, they achieve a deep-fried crunch without the oil bath.

Ingredients

Scale
  • 3 pounds chicken wings (mix of drumettes and flats)
  • 1 tablespoon aluminum-free baking powder
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon kosher salt
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ½ teaspoon freshly cracked black pepper
  • Optional: Red pepper flakes, fresh chives, hot sauce

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings dry thoroughly with paper towels to remove moisture.
  3. Sprinkle baking powder, garlic powder, onion powder, parsley, and salt over the wings. Toss until every wing is lightly coated.
  4. Arrange wings in a single layer on the wire rack, ensuring they are not touching.
  5. Bake for 40 minutes. Flip the wings over at the 20-minute mark.
  6. Bake for another 10-15 minutes until deeply golden and crisp. Optionally broil for the last 2 minutes for extra color.
  7. While wings bake, melt butter in a saucepan or microwave. Stir in minced garlic, grated Parmesan, and black pepper. Let sit for a minute to infuse.
  8. Transfer hot wings to a large bowl. Pour the butter-garlic-Parmesan mixture over them and toss vigorously to coat.
  9. Serve immediately while hot and crispy.

Notes

The key to crispy wings is drying them thoroughly before seasoning and using a wire rack to allow air circulation. Do not crowd the wings on the pan. Use aluminum-free baking powder to avoid a metallic taste. For leftovers, reheat in an air fryer or oven; never microwave as it makes them soggy.
