Instructions

  1. Prep ingredients: Chop veggies, measure cheese, and set out tortillas.

  3. Sauté vegetables: In the same skillet, sauté diced onions, peppers, or mushrooms until soft. Drain liquid and spread on a separate baking sheet to cool completely.

  6. Wrap for freezing: Wrap each burrito tightly in plastic wrap, then in aluminum foil. Label with date and filling type.

  8. Store: Transfer solid burritos to freezer-safe bags. They keep for up to 3 months.
