  • 4 cloves garlic, minced
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (15 oz) corn (or 1.5 cups frozen corn)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted recommended)
  • 1 cup vegetable broth (low-sodium)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Optional: 1 bell pepper, diced; 1 jalapeño, seeded and diced; avocado for serving; sour cream or Greek yogurt for serving

Instructions

  1. Prep ingredients: Dice the onion, mince the garlic, and rinse the beans and corn. Measure out spices.
  2. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and a pinch of salt; cook for 3-4 minutes until soft. Add garlic and cook for 1 minute until fragrant.
  3. Bloom spices: Add chili powder, cumin, and smoked paprika to the pot. Stir constantly for 30-60 seconds until fragrant.
  4. Combine ingredients: Add diced tomatoes (with juices), black beans, corn, and vegetable broth. Stir to combine and scrape up any browned bits from the bottom of the pot.
  5. Simmer: Bring to a boil, then reduce heat to low. Partially cover and simmer for 20 minutes, stirring occasionally.
  6. Adjust and serve: Taste and adjust seasoning with salt, pepper, or lime juice. Serve hot with desired toppings like avocado, sour cream, or cilantro.

Notes

Rinse beans well to remove metallic taste. Bloom spices in oil for deeper flavor. Use fire-roasted tomatoes for smokiness. Chili tastes better the next day. Can be frozen for up to 3 months.
