  • 2 cups (200g) vanilla wafers, crushed
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 24 ounces (680g) full-fat cream cheese, softened
  • 1 cup (240g) full-fat sour cream
  • 1 cup (240ml) heavy whipping cream, cold
  • 2 teaspoons vanilla extract
  • ½ cup (60g) confectioners’ sugar
  • 2 boxes (5.1 oz each) instant vanilla pudding mix
  • 4 cups (960ml) whole milk, divided
  • 4 large ripe bananas
  • 1 container (8 oz) whipped topping, thawed

Instructions

  1. Grease a 9-inch springform pan. Crush vanilla wafers into fine crumbs and mix with melted butter and sugar. Press firmly into the bottom of the pan and set aside.
  2. Beat softened cream cheese until smooth. Add sour cream, vanilla extract, and confectioners’ sugar; beat until combined.
  3. Whip cold heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture in two additions.
  4. Spread cheesecake mixture over the crust and refrigerate for at least 30 minutes to firm up.
  5. Whisk instant vanilla pudding mix with 2 cups of cold milk until thickened. Whip thawed whipped topping until fluffy.
  6. Fold whipped topping into the pudding mixture. Slice bananas into ¼-inch rounds.
  7. Remove cheesecake from fridge. Spread half the pudding mixture over the layer, add half the bananas, then remaining pudding, and top with remaining bananas.
  8. Cover tightly and refrigerate for at least 4 hours, ideally overnight.
  9. Remove springform ring and slice with a clean knife. Serve chilled.

Notes

Bananas turn brown quickly; toss slices in lemon juice to preserve color and layer them between pudding to prevent exposure. Ensure cream cheese is fully softened to avoid lumps. Do not freeze this dessert as bananas release water and cream cheese becomes grainy. Serve within 24 hours for best appearance.
