  • ½ cup (60g) powdered sugar, sifted

  • 23 tablespoons Biscoff spread, warmed (for topping)
  • Crushed Biscoff cookies (for garnish)

Instructions

  1. Line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Crush Biscoff cookies into fine crumbs using a food processor or zip-top bag. Mix with melted butter and salt until resembling wet sand.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Refrigerate while making the filling.
  4. In a large bowl, whip the cold heavy cream until stiff peaks form. Set aside.
  5. In a separate large bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and Biscoff spread until smooth and creamy (about 2-3 minutes).
