Description
A quick, no-bake snack made with peanut butter, oats, and chocolate, designed to be packed in lunchboxes and hold up without melting.

- 1 cup creamy peanut butter
- 1 ½ cups old-fashioned rolled oats
- ½ cup honey
- 2 tablespoons unsalted butter
- 1 ½ cups dark chocolate chips (semi-sweet)
- 1 tablespoon refined coconut oil
- 2 tablespoons powdered sugar (optional)
- ½ cup mix-ins (pretzels, mini M&Ms, chopped peanuts, or dried fruit)
- Sea salt flakes for topping
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the long sides.
- In a large microwave-safe bowl, combine peanut butter, honey, butter, and oats. Microwave on high for 60-90 seconds until warm and glossy. Stir well to combine.
- Stir in your chosen mix-ins (pretzels, M&Ms, nuts, etc.) until evenly distributed.
- Transfer the mixture to the prepared pan. Press down firmly and evenly using a spatula or greased hands. Smooth the top.
- Place the pan in the freezer for 15-20 minutes to set the base.
- While the base freezes, melt chocolate chips and coconut oil in a small microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Remove the pan from the freezer. Pour the melted chocolate over the frozen base and spread evenly to the edges.
- Press any extra mix-ins into the top if desired.
- Return the pan to the freezer for at least 30 minutes until the chocolate is completely hardened.
- Lift the block out of the pan using the parchment overhang. Slice into 12-16 bars using a sharp knife.
Notes
Use creamy, processed peanut butter for best binding; natural peanut butter may make the bars greasy. Press the base firmly to prevent crumbling. Pack bars frozen in an insulated lunch bag with an ice pack to prevent melting. Store in the freezer for up to 3 months.
