Description
A rich, creamy, and foolproof no-bake dessert that requires zero heat. This pie combines a crunchy chocolate cookie crust with a dense, cheesecake-like peanut butter filling, making it perfect for lazy weeknights or last-minute guests.
Ingredients
Scale
- 30 chocolate sandwich cookies (such as Oreos), crushed into fine crumbs
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 8 ounces cream cheese, softened
- 1/2 cup creamy peanut butter (standard processed brand)
- 1 cup powdered sugar
- 8 ounces whipped topping (such as Cool Whip), thawed
- 1/2 cup mini chocolate chips (semi-sweet or milk)
Instructions
- Crush the chocolate sandwich cookies into fine crumbs using a food processor or a heavy-duty zip-top bag with a rolling pin.
- In a medium bowl, mix the cookie crumbs, melted butter, and granulated sugar until the mixture resembles damp sand.
- Press the crust mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the bottom of a measuring cup to pack it tight. Chill in the fridge for 15 minutes.
- In a large bowl, beat the softened cream cheese and peanut butter together with an electric mixer until completely smooth and silky.
- Add the powdered sugar and beat until combined. The mixture will be thick and dense.
- Gently fold in the thawed whipped topping using a rubber spatula to maintain airiness. Fold in the mini chocolate chips.
- Pour the filling into the chilled crust and smooth the top.
- Cover loosely with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until firm.
- Slice with a sharp knife dipped in hot water for clean cuts. Serve cold.
Notes
Ensure cream cheese is fully softened to avoid lumps. Use standard creamy peanut butter, not natural, to prevent a greasy texture. The pie must chill for at least 4 hours to set properly. Do not freeze, as the whipped topping will become grainy upon thawing.
