Description

  • 2 cups (160g) old-fashioned rolled oats
  • 1 cup (250g) natural creamy peanut butter
  • 1 scoop (30g) vanilla whey or plant-based protein powder
  • 1/3 cup (110g) honey or maple syrup
  • 24 tablespoons (30-60ml) milk (dairy or non-dairy)
  • 1/2 cup (85g) dark chocolate chips
  • 2 tablespoons (15g) flaxseed meal
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, protein powder, flaxseed meal, and salt. Whisk to break up clumps.
  3. Add the peanut butter, honey, vanilla extract, and milk to the dry mixture. If ingredients are stiff, microwave for 15-20 seconds to soften.
  4. Stir everything together with a spatula until it forms a thick, dough-like consistency. If too dry, add milk one tablespoon at a time. If too sticky, add more oats.
  5. Portion the mixture into equal-sized balls (approx. 1.5 tablespoons each) and roll between palms to smooth.
  6. Place balls on the prepared baking sheet, leaving space between them.
  7. Chill in the refrigerator for at least 30 minutes or in the freezer for 15-20 minutes until firm.
  8. Transfer to airtight containers for storage.

Notes

Ensure oats are certified gluten-free if needed. Use natural peanut butter without added sugar for best results. If the mixture is too dry, add milk gradually. If too sticky, add more oats. These freeze well for up to three months.
