  • 12 dinner rolls (Hawaiian or Kaiser rolls recommended)
  • 1 pound (450g) breakfast sausage (links or patties)
  • 2 cups (200g) sharp cheddar cheese, shredded
  • 2 tablespoons (30g) butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon poppy seeds (optional)
  • Salt and black pepper to taste
  • 2 large eggs (optional, for egg version)
  • Hot sauce or mustard (optional, for serving)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 13×9 inch baking sheet with parchment paper or grease lightly.
  2. Slice the dinner rolls horizontally to create top and bottom layers. If using individual rolls, slice each in half.
  3. Heat a skillet over medium heat and cook the breakfast sausage until browned and cooked through, about 5 minutes. Drain excess grease on a paper towel. If using eggs, scramble them lightly and mix into the sausage.
  4. Place the bottom halves of the rolls on the baking sheet. Sprinkle a layer of shredded cheddar cheese over the bread.
  5. Add a generous scoop of the sausage mixture on top of the cheese. Top with another sprinkle of cheese to act as glue.
  6. In a small bowl, mix the melted butter with garlic powder and poppy seeds. Brush this mixture generously over the top halves of the rolls.
  7. Place the top halves on the sliders.
  8. Bake for 8-10 minutes until the cheese is bubbly and the tops are golden brown. For extra crispiness, broil for the last 1-2 minutes, watching closely.
  9. Remove from oven and let cool for 2-3 minutes to allow the cheese to set. Serve warm with hot sauce or mustard.

Notes

Drain grease from sausage to prevent soggy sliders. Use sharp cheddar for better flavor and melting. Let sliders cool for 2 minutes after baking to help them hold together. Can be assembled ahead and refrigerated overnight; add 2-3 minutes to bake time if baking from cold.
